April 2015, Krabi – Guest and lovers of modern gastronomy at Sofitel Krabi Phokeethra Golf & Resort recently enjoy a fascinating cookery demonstration by Chef Jacobo Astray.
The gifted former chef at Spain´s legendary 3-star Michelin restaurant, El Bulli, delighted guests by demonstrating the modern culinary techniques of spherification, foams and airs. At the interactive event in the resort’s lobby, guests were also invited to try the intriguing methods for themselves.
In the evening, adventurous epicureans sat down to an impressive dinner of Chef Jacobo’s avant-garde cuisine at the resort’s renowned restaurant, Venezia. His innovative menu included an amuse bouche of olive spheres, two textures of prawns and foie gras mousse. Highlights of the unforgettable evening were 65ºC sous vide egg on a mushroom foam with crispy ham and truffle oil, beautifully coooked white snapper in yellow curry with potato purée and kaffir leaf air, and a decadent dessert of yogurt sponge with white chocolate sauce, berries and crispy coconut.
