Tuesday 20th May 2014 saw a new wave of culinary confidence launched at Maikhao Dream Villa Resort & Spa as it introduced its new unique Dining Ritual dining concept to local media at the resort’s Dream Bar. The Dining Ritual, which uses specially selected foods and dishes that are tailored for the body’s chakras, showcases an elaborate service and food presentation that will pique the interests of curious gourmands as well as wellness enthusiasts.
This exclusive dining experience at the Dream Bar is part of daily rituals being put into place as part of the brand re-launch planned for this year.
THE DINING RITUAL
The origins of an elaborate dining ritual can be traced back to 18th century England where cultural customs were the focus of the meal, and such dinners were held in high esteem with only a handful of guests partaking in such a gathering.
Similar to this tradition, the Dining Ritual at the Dream Bar offers guests an experience for all senses. To signal the beginning of the meal, a gong is sounded and burners with essential oils lighted. The sounding of the gong, according to Thai tradition, is done to ward off negative energy and enhance the flow of the positive ones. The essential oils set the mood and enhance the dining experience.
After preparing for dinner, Villa Butlers usher guests to their appointed seats. Following an elaborate ritual, a soup, followed starter are served. When the main course is served, new table cloths and table arrangements are placed on the table. To accompany the dishes, guests can select wine or soda as their preferred drink. At the conclusion of the dinner, which lasts approximately two hours, each guest is served tea or coffee.
FOOD FOR THE CHAKRA
Chakras are the energy centers located throughout the body that influence and reflect the physical health as well as the emotional, mental, and spiritual well being.
There are seven main chakras that begin with the root, or base, chakra at the base of the spine, ascending in a column to the crown chakra at the top of the head. Each chakra is associated with a particular color along with certain functions. In order to maintain the balance of each chakra, there must be a continuous and clean flow of energy to increase the natural intuitive abilities.
The Dining Ritual’s ever changing menu is tailored for each chakra. Each chakra vibrates a certain color and requires specific nutrients in order to function properly and maintains its balance. The Root Chakra vibrates the color red and red-colored foods contain high levels of Vitamin C while Sacral Chakra requires food with high water content and rich in Omega-3. The Navel Chakra vibrates the color yellow such as granola, flax seeds, and rice that are good for digestion. Green leafy vegetables are assigned for the Heart Chakra as it vibrates the green color while the Throat Chakra requires herbal teas and fruit juices to maintain the chakra in mint condition. The Third Eye Chakra vibrates the color indigo and this kind of food is rich in antioxidants known as anthocyanidins that protect the brain and nervous system from stress. Lastly, the top chakra which is the Crown vibrates the color white which is responsible for detox and for cleansing.

Each and every Tuesday, the Dining Ritual menu will focus on the SACRAL CHAKRA. The sacral chakra keeps your energy dynamic and flowing. It is connected to emotions and creativity usually associated with sexuality, reproduction, and creativity.
Orange food provides the vibration needed to balance this chakra as they contain relatively high levels of carotenoids – a nutrient that protects against free radical.

Duck breast pan-fried and flambéed with an orange cognac jus served with oven baked pumpkin wedges and root vegetable puree
Mulwarra lamb rack perfectly served with baby Koh Sok organic baby carrots, pumpkin timbale and steamed broccoli and finished with a pink peppercorn jus (image below)
Fresh fruit platter of Sun quick orange, delicious mango and honeydew melon served with a selection of raw nuts and cashews
