Last night, 25th February 2014, Mom Tri’s Kitchen played host to a special 5 Course Wine Dinner featuring wines from the prestigious Silver Oak & Twomey Cellars, located in the Napa Valley area in California, America, one of the best wine regions in the world.
Silver Oak is single-minded in the pursuit of exceptional Cabernet Sauvignon. For 40 years, the Duncan family has produced delicious and distinctive Cabernets from their Napa Valley and Alexander Valley wineries. Each Cabernet is food-friendly, extensively aged to be drinkable upon release, and perfect for enjoying with friends or family.
The family established Twomey Cellars to pursue the discovery of varietals in California beyond Cabernet Sauvignon. They use the same philosophy that has guided Silver Oak since its founding in 1972: make exceptional, food-friendly wines that are deliciously drinkable upon release.
The Food & Wines
Sesame Salmon – rare salmon wrapped in nori roll and breadcrumbs, served with pickled vegetables & wasabi mayo
Twomey Sauvignon Blanc Napa Valley 2012 – This wine has as a light golden hay color with green edges. The aromatics burst forth with sweet custard apple, green melon and lemongrass notes accentuated by hints of fresh guava, candied pineapple, cream and brioche. On the palate, flavors of bright lime peel and citrus combine with hints of vanilla custard and grapefruit pith. The wine has ample weight on the mid-palate with a bright acid backbone supporting a creamy richness and notes of pie crust, leading to a clean crisp lingering finish.
Scallop, Lobster & Chorizo – pan fried with leek, beurre rouge, puff pastry
Twomey Pinot Noir Russian River 2011 – A wine with a red rose petal to ruby color. It has a nose of potpourri, strawberry jam, conifer bark, wild chanterelles and black truffle with hints of cinnamon, ginger and chocolate. On the palate, the wine is fruit-sweet and very full-bodied with flavors of ripe red berries and malt. It finishes with bright acidity and medium grained tannins.
Roast Wagyu Beef served with sauté mushrooms & artichokes, roast carrot and sauce Bearnaise
Silver Oak Cabernet Sauvignon Napa Valley 2005 – The wine has a good deep red-ruby color. It has musky aromas of cassis, licorice, game, tobacco leaf and subtle brown spices. On the palate, the wine is velvety-sweet and deep, with hints of tobacco leaf, mint and herbs.
Silver Oak Cabernet Sauvignon Napa Valley 1997 – The 1997 Napa Valley is a wine of extraordinary intensity and depth. It has a very dark garnet color and a concentrated nose of cassis, roasting coffee, chocolate, violets and sandalwood. It is extremely rich on the palate, with a full body and a long, fruity intense finish.
XO Mimolette & Pistachio Cheery Nougat, honeycomb & coulis
Silver Oak Cabernet Sauvignon Alexander Valley 2005 – A classic Alexander Valley cabernet, this is dark and cedary, and as smooth as velvet. The tannins last, built on black cherry-skin flavor and earthy, root-vegetable notes. With time, that black cherry flavor should become more prominent, balancing the wine’s earthy complexities.
