Marco Westmaas the owner of the iconic Elzenduin Beach Restaurant in Holland has revolutionized healthy flavourful cuisine using every ingredient from conventional meats, seafood and vegetables through to hugely progressive innovations such as Lupines, Pandanus, Gojiberry and Nori seaweed all in the cause of serving the most stunning flavours and textures to the palettes of his amazed dinners.
Awarded by Gault & Millau as the most talented chef of the year and working with the European Union on crop and herb innovation, Chef Marco is a highly creative pioneer of the most progressive cuisine.
