Gazpacho Recipe by Chef Dom of Novotel Panwa, Phuket

Recommend menu from French Chef, Dominique, of Novotel Panwa, Phuket. Here is Gazpancho.

Gazpacho is a cold Spanish tomato-based raw vegetable soup, originating in the southern region of Andalusia. It is widely consumed in Spain, Portugal and Latin America especially during summer times.


6 ripe tomatoes, peeled and chopped
1 purple onion, finely chopped
1 cucumber, peeled, seeded, chopped
1 sweet bell pepper, seeded and chopped
2 stalks celery, chopped
2 teaspoon chopped fresh parsley
2 teaspoon chopped fresh chives
1 clove garlic, minced
1/4 cup red wine vinegar
1/4 cup olive oil
2 teaspoon freshly squeezed lemon juice
2 teaspoons sugar, salt and fresh ground pepper to taste
6-10 drops of Tabasco sauce to taste
1 teaspoon Worcestershire sauce
4 cups tomato juice


  1. Combine all ingredients and blend slightly
  2. Place in non metal container/glass
  3. Cover tightly and refrigerate 20-24 hrs
  4. Decorate with spring onion and small diced carrot, onion and cucumber up
