On Saturday vening, 25th January 2014, Mom Tri’s Kitchen, the restaurant of Phuket’s Mom Tri’s Villa Royale, held a very special six course set menu wine dinner prepared to by three world class chefs. Joining Mom Tri’s Kitchen’s very own Chef Darren & Chef Sura in the kitchen was very special guest, Danish award winning master chef Per Hallundbeak.
The wines, specially selected to accompany the dishes, were chosen by no other than Georges Ciret – Wine Director of Mom Tri’s Villa Royale.
Chef Pers is currently the Chef/General Manager of the Falsled Kro Hotel & Restaurant in Denmark.
Oysters with crispy pigs trotter, parsley puree, cucumber, apple and horseradish
Paired with Chandon Brut, Yarra Valley, Australia
Raw marinated fish with puree of buckthorn, chips of spelled and mushrooms variation
Paired with Riesling 2010, Bel Cato dry, Pegasus Bay, Canterbury, New Zealand
Steamed fish with tarragon oil, cauliflower puree and raw marinated in a mussel juice
Paired with Chablis 2012, Domaine Louis Michel, France
Crispy chicken egg with morel sauce and hay cheese
Paired with Ronan by Chateau Clinet 2010, Bordeaux, France
Cutlet from quail with onions in different textures and sherry sauce
Paired with Shiraz 2010, Te Mata Bulnose, Hawles Bay, New Zealand
Dessert with Danish quinces, blackberry puree and chocolate mousse
Paired with Muscat Beaumes de Venise 2010, Doaine des Bernardins
Mignardises, Selection of Fine Teas and Arabica Coffee
